Halloween Taco Stuffed Pepper

Celebrate Halloween with these fun pumpkin shaped meals. 

If you love carving pumpkins this is the recipe for you. Easy to assemble and not to mention they are delicious. Recipe adapted from Pink Fortitude.

Ingredients:

  • 6-8 Orange Peppers
  • 1lb Ground Extra Lean Ground Bison
  • 1 Box Rice (Plain, Spanish, or Cilantro)
  • 1/2 Cup Shredded Mexican Style Cheese or Regular
  • 1 Package Taco Sauce
  • 2 tsp Taco Seasoning
  • 8 oz Salsa Optional

Directions:

  1. Preheat oven 300 degrees
  2. Make rice (usually around 20-25 minutes) for one box.
  3. Meanwhile, cooke ground bison in a skillet, until no longer pink. Add taco sauce and seasoning once cooked. Mix together and turn off heat.

  4. Cut the tops off the peppers and scoop out the seeds.
  5. With a paring knife, cut out a jack o' lantern face
  6. Add rice (and optional salsa) to the meat. Mix together.

  7. Place peppers in a casserole dish so they are snuggled in and not able to fall over.
  8. Add meat-rice mix to the peppers.

  9. Bake at 300 degrees for 15 minutes.
  10. Top with your favourite shredded cheese.
  11. Bake 15 more minutes. Enjoy!
